Water makes up more than 98% of a cup of coffee, yet it’s often the most overlooked ingredient. Even the highest-quality beans can taste flat, bitter, or unbalanced if brewed with poor water. Understanding water quality is essential for anyone looking to consistently brew great-tasting coffee—whether at home, in a café, or for a coffee brand.

The mineral content of water plays a major role in extraction. Minerals like calcium and magnesium help pull desirable flavors from coffee grounds, contributing to sweetness, clarity, and balance. Water that lacks minerals can result in dull, under-extracted coffee, while overly hard water can lead to harsh or bitter flavors.

Chlorine and other impurities are another concern. While commonly used to treat drinking water, chlorine can overpower coffee’s natural aromas and flavors. Using filtered water helps remove these unwanted elements, allowing the coffee’s true character to shine through.

Water temperature also affects brewing quality. Ideal brewing temperatures generally fall between 195°F and 205°F (90–96°C). Water that’s too hot can over-extract coffee, creating bitterness, while cooler water may under-extract, resulting in sour or weak flavors. Consistent temperature control is key to repeatable results.

Different brew methods can be more sensitive to water quality than others. Pour-over and espresso, for example, highlight subtle flavor differences and are especially affected by mineral balance and purity. This is why many cafés use customized water filtration systems to achieve optimal brewing conditions.

For coffee brands and cafés, educating customers about water quality adds value and builds credibility. For consumers, small changes—like using filtered water or adjusting mineral content—can dramatically improve daily coffee.

Ultimately, great coffee isn’t just about beans and technique. When water quality is dialed in, it enhances extraction, elevates flavor, and helps every cup reach its full potential.
