Spiced Jaggery Chai (Gur Chai)

Jaggery chai is deeply traditional and richly flavored. Made with unrefined cane sugar, jaggery adds earthy sweetness and depth that white sugar can’t replicate. This chai feels rustic, authentic, and comforting.
Ingredients (2 mugs):

1 ½ cups water

1 cup milk

2 tsp black tea leaves
-
1–2 tsp grated jaggery (to taste)

Ginger, cardamom, cinnamon

Optional: pinch of fennel seeds
Method:

Simmer spices: Simmer water, ginger, cardamom, cinnamon, and fennel for 5 minutes.

Add tea: Add tea leaves and simmer briefly.

Add milk: Add milk and gently boil.

Add jaggery: Turn off heat and stir in jaggery until dissolved.

Strain & serve.
