What Is Single Origin Coffee?

Single origin means the coffee comes from one specific place — a single farm, cooperative, or region — rather than being blended with beans from multiple sources.

A blend mixes beans from multiple regions to create a consistent flavor profile. Single origin keeps each lot separate, so you taste the unique character of one place. Blends are about balance; single origin is about distinctiveness.

Borrowed from wine, terroir refers to how soil, climate, altitude, and microorganisms shape a coffee's flavor. A Yirgacheffe grown at 2,200m tastes nothing like a Brazilian at 1,100m — terroir is why.

From Cherry to Bean

Processing Methods

How the coffee cherry is removed from the bean is one of the biggest factors in flavor — sometimes more than the origin itself.

Washed

The cherry fruit is fully removed before drying. The beans are fermented in water to strip the mucilage, then dried on raised beds. This produces a clean, bright cup that lets the terroir shine through.

Natural

The whole cherry is dried intact around the bean, often on raised beds in the sun. The fruit ferulates into the bean, creating intense sweetness, heavy body, and bold fruity notes. The oldest processing method.

Honey

A hybrid method — the cherry skin is removed but some of the sticky mucilage (the "honey") is left on during drying. Results in a cup between washed and natural: sweet, syrupy body with gentle fruit complexity.

How We Source

Our sourcing process is built on long-term relationships, not commodity markets. Here's how it works.

01 🤝

Relationship

We build direct relationships with farmers and cooperatives, often visiting their farms year after year. Trust takes time — some of our partners we've worked with for a decade.

02 📦

Sample

Before any commitment, we request pre-shipment samples from each lot. These small samples arrive green and we roast them in our cupping lab to evaluate potential.

03 ☕

Cup

We cup every sample blind using SCA protocols. Only lots that score 84+ and meet our flavor standards move forward. We taste for defects, complexity, and character.

04 ✅

Commit

Once a lot passes cupping, we commit to purchasing — often at prices 2-3x above the commodity C-price. We pay directly, ensuring more money reaches the farmer.

Frequently Asked Questions

What does "single origin" actually mean?
It means the coffee comes from one identifiable origin — a single farm, cooperative, or region — rather than being blended with beans from multiple countries. This lets you taste the unique character of one specific place.
Is single origin better than a blend?
Neither is inherently better. Single origin offers distinctiveness and traceability — you taste the terroir. Blends offer consistency and balance. For pour-over and light roasts, single origin shines. For espresso and milk drinks, blends often work better.
What is direct trade and why does it matter?
Direct trade means we buy coffee directly from the farmer, bypassing middlemen. This typically results in higher prices for producers and greater transparency for consumers. You know exactly who grew your coffee and what they were paid.
Why do some coffees taste fruity or floral?
Flavor is determined by variety, altitude, soil, and processing. High-altitude coffees (1,800m+) tend toward bright, floral, and fruity notes. Natural processing intensifies fruitiness, while washed processing produces cleaner, more delicate flavors.
How should I brew single origin coffee?
Pour-over methods (V60, Chemex, Kalita) are ideal for highlighting the nuanced flavors of single origin coffee. We recommend a 1:16 ratio, water at 93-96°C, and a medium-fine grind. Lighter roasts may benefit from slightly higher temperatures.
How fresh are your single origin beans?
We roast to order and ship within 24 hours. Coffee is best 3-21 days after roast. We source seasonally, so the origins available at any given time reflect the most recent harvest from each region — check our calendar above.
